I just took a stab at this one - quite simple -
this calls for sliced or wedge cut taters - but the simple coating can be used on patties as well -
3 medium sweet potatoes (about 1 pound total)
3 cups Kellogg's Corn Flakes® cereal
1/4 teaspoon Cinnamon
1 egg, beaten
Place egg in shallow dish. Spread half of the cereal on plate or sheet of wax paper.
Dip potatoes in egg, then roll in cereal, pressing cereal onto potatoes. Place in single layer on baking sheet coated with cooking spray. Add more cereal to plate as needed. This keeps the cereal dry to it sticks to potato.
4. Bake at 425° F for 23 to 28 minutes or until browned and tender. Serve warm.
There is also a chance they are using panko bread crumbs.
I haven't tried this but I will try it both ways and see how they turn out - using panko and cereal.
I may even try Captain Crunch for a sweeter taste.
