Pancake Mix Cornbread
This makes really good and light cornbread because pancake mixes are made with low protein/gluten flour.
This cornbread does not taste like pancakes. :)
Makes one 8 x 8 inch pan of cornbread
1 1/2 cups pancake mix or baking mix
1 cup cornmeal
1/2 tsp baking powder
1/2 tsp salt
1/4 cup sugar or honey
1 cup milk
1/4 cup vegetable oil
1 egg
8 inch square baking pan
Cooking spray
Spray the inside of the baking pan with cooking spray.
Preheat the oven to 350 degrees Fahrenheit.
Combine the pancake mix, cornmeal, baking powder, salt and sugar in a bowl.
Mix together the milk, oil and egg in a separate bowl.
Stir the liquid ingredients into the cornmeal and pancake mix until thoroughly combined. Do not stir until smooth, any lumps left will cook out.
Pour the batter into the baking pan and bake at 350 degrees Fahrenheit for 28 to 32 minutes or until a knife inserted into the middle comes out clean.
Serve warm.
