Kitchen Witch's Salami Salad Supreme
I love my salads and I make all different kinds for every occasion or just for personal enjoyment. Homemade dressings only!
This "salad" is one of my personal favorites -
the basics for the salad -
chunks of salami (both Genoa and hard), sopressata (this I slice or cut into julienned sticks), pepperoni, hot ham and/or cappicola, red or sweet onion, pepperoncini, strips of red bell pepper -
to assemble - I combine the onion and peppers in a bowl and drizzle with olive oil; season with fresh cracked black pepper, Kosher salt - and mix well and I let this sit for about 15 minutes (the salami, etc. does not need any additional salt added!)
add the salami, sopressata, pepperoni, etc. - drizzle with olive oil
that's the basic version - and it will keep covered in the fridge for a few days (if it lasts that long around here!)
now for serving -
serve as is or add
homemade bread strips (homemade bread strips or thick cubes dipped in my dipping sauce and toasted in a skillet), cubed Italian cheese of choice and even cooked and cooled pasta of choice! You may need to add a bit more olive oil - especially if you like to dip a chuck of Italian bread in your salad while eating it.
Of course - as with any salad - you can add tomatoes, olives, etc - but adding too much takes away the "salami theme" of the salad.
KITCHEN WITCH'S BREAD DIPPING SAUCE MIX
1 tablespoon crushed red pepper
1 tablespoon black pepper
1 tablespoon dried oregano
1 tablespoon dried rosemary
1 tablespoon dried basil
1 tablespoon dried parsley
1 tablespoon garlic powder
1 tablespoon minced garlic
1 teaspoon salt
Place all ingredients in grinder and grind evenly if you like - if not, mix well.
Store airtight.
When you want to use it - mix 1 tablespoon of this mixture with olive oil (extra-virgin preferred). You can adjust the flavor the way you want.
Dip warm bread into mixture and enjoy!
If making subs/hoagies/panini sandwiches - I combine this mixture in a plastic bottle similar to a plastic ketchup or mustard bottle and shake and squeeze on the bread as a dressing. It can also be used with mayo/salad dressing on sandwiches for a little extra "zing" in the flavor.
