Island Style Ground Pork Patties

Ground Pork Patties from the Islands

makes 4 patties



1 pound [454 g] ground pork

3/4 to 1 cup [190 to 250 mL] dried breadcrumbs

1/4 to 1/3 cup [60 to 80 mL] thick spicy hone barbecue sauce



Garnishings



1/2 mango, finely chopped

1/2 sweet red pepper, membranes removed and seeded, finely chopped

2 tablespoons [30 mL] freshly finely chopped cilantro or parsley

2 tablespoons [30 mL] finely chopped red onion

1 tablespoon [15 mL] thick spicy honey barbecue sauce

1 tablespoon [15 mL] fresh lime juice







Preheat barbecue to medium intensity.

Meanwhile, prepare and mix together all garnishings ingredients; reserve.

Mix together ground pork and breadcrumbs.

Shape mixture into 4 patties.

Brush one side of patties with thick spicy hone barbecue sauce.

Transfer onto hot barbecue rack, coated side down.

Grill for 8 minutes.

Brush patties with more thick spicy hone barbecue sauce.

Turn patties over and grill for approximately 8 minutes more, until well-done.

Serve, topped with garnishings.
