Christmas Chicken Salad

Well, before I can start about this Salad, let me tell that this recipe is actually an innovation of

Chef Argiro Barbarigou. He makes a salad with chicken and pomengranate that will be a tasty surprise to your festive table. When I tried it, it tasted brilliantly better than any other salad I had tried until then.



Ingredients:

For the chicken




  1. 1 (1½k) chicken, boiled

  2. 1 small onion1 carrot

  3. 1 stick of celery

  4. 1 stalk of leek








For the salad




  1. 400g walnuts, ground

  2. 2 stalks of celery, finely chopped

  3. 2 large carrots, grated

  4. 1 red onion, grated

  5. 2 slices of stale bread

  6. 2 tablespoons sweet paprika

  7. 2 cloves of garlic

  8. 1 tablespoon cayenne pepper

  9. 2 teacups of mayonnaise

  10. 2 teacups of chicken stock

  11. some parsley, very finely chopped

  12. 2 pomegranates (arils) salt






Procedure:

Place the chicken and the vegetables together in a casserole type pan, add enough water to barely cover them and simmer until the chicken is tender.

Discard the bones and shred the chicken. Soak the stale bread in the chicken stock and then squeeze it.

Put the bread, walnuts, garlic, paprika, cayenne and salt in the food processor and blend.

Transfer the mixture into a bowl and add the carrot, celery, stock, mayonnaise, arils and parsley.

Combine well.
