French toast with cheese

I was wondering if you someone from the forum is a vegan and can help me.

I am a vegetarian and I'm on my way to be a vegan.



I found this recipe of french toast for my kids, but I am trying to replace the cheese for something that it's not from animals. I know that it also has eggs, but I still want my children to eat not only vegan.

Do you know what can be a good ingredient to put instead of cheese?
