Twicw Baked Bread

2 Tbls (one Package) Yeast

1 Tsp Salt

7 cups Asst. Flour (White, Whole Wheat, Rye, Oat)

2-3 cups warm (110-115*) water

1/2 cup Sugar or Honey/molassas

1/2 cup Lard





Preheat over to 400*



Place Yeast in mixer/mixing bowl and add one cup warm water and allow to proof. When water looks like a murky swamp and sort of smells like a swamp, add sugar,salt, and Lard and mix well until lard begings to melt into warm water. Add flours a cup at a time and mix

until all flour is used add more water as needed to absorb flour. When dough pulls away from sides of bowl, turn out on floured surface and knead by hand, really beat the dough like a red headed Step Child LOL. When dough begins to fight back, place in greased bowl and allow to rise to double in size. Turn out again and and punch down and again knead the dough until smooth ball forms. Divid into two or more loaves and place in bread pans or on baking sheet covered with Course Corn Meal. Place seam side down. Bake and 400* until loaves sound hollow when thumped on bottom or instant read Thermometer read at least 170-189degrees.



Allow to cool and then cut into slices and brush slices with olive oil and sprinkle with favorite spice (Cinnamon,Nutmeg, Garlic, Basil) and place in Toaster and allow to toast. Spread with favorite spread (Butter, Cream Cheese, or Jam)
