Houlihan's Smashed Potatoes - my way



No fancy nothing here - just a good smashed potato recipe which originally called for those lousy Durkee French Fried Onions that I cannot stand.



Don't ask me for the measurements - this is a total no-brainer!





I start by boiling or steaming my potatoes until fork tender. If steamed I remove the jackets and place in bowl. I add salt and pepper to taste, with a bit of grated fresh onion, a pinch or two of garlic powder, a good dollop of sour cream, and whole milk (heated). My preference is whole milk - it makes the taters taste better in my book. Smash - sometimes we like them lumpier, sometimes we want them beat smooth.



Houlihan's uses those lousy canned onions - at this point I can use diced, caramelized onions, or diced and lightly sauteed onions, or breaded onion rings or even my frizzled onions -

Just serve your prepared taters with a topping of your choice of onions and you've got some really good smashed potatoes that your family will want all the time!
