Apple-Prune Jam
Servings: 4 [8-ounce / 250-mL each] jars
5 medium apples
Approximately 1 1/2 pounds [680 g] stoned prunes
2 cups [500 mL] water
2 tablespoons [30 mL] lemon juice
1/2 cup [125 mL] raisins
5 1/2 cups [1.1 kg] sugar
1/2 teaspoon [2.5 mL] cinnamon
1/4 teaspoon [1 mL] nutmeg
1/8 teaspoon [0.5 mL] allspice
4 [8-ounce / 250-mL each] hot sterilized jars
Peel, core then cut apples into large pieces; cut stoned prunes into large pieces.
Transfer into a large enough casserole.
Pour in water and lemon juice before mixing in raisins and sugar.
Bring to a boil.
Stirring often, cook mixture over high heat for 20 to 25 minutes.
Remove from heat, then skim using a metal spoon.
Stir in cinnamon, nutmeg and allspice.
Evenly spoon into hot sterilized jars.
Seal.
