Peanut Butter Cookies (Johnny Cash's Mother's Recipe)





1/2 cup shortening

1/2 cup brown sugar

1/2 cup white sugar

1/2 cup peanut butter

1 egg, well beaten

1/2 teaspoon salt

1 teaspoon baking soda

1 1/4 cups sifted flour









Cream shortening and both sugars.



Add peanut butter and well beaten egg.



Add salt, soda and sifted flour.



Makes a rather stiff dough.



Form into balls on cookie sheet and press both ways with fork.



Bake in 350 degree oven until done.
