Florentine-Style Spaghetti with Meat







1 pound [454 g] spaghetti noodles

2 tablespoons [30 g] butter or margarine

1/2 pound [227 g] mild Italian sausage, sliced (or ham, or pepperoni, or soppresata, etc.)

25 1/2 ounces [725 mL] tomato sauce

1 teaspoon [5 mL] oregano

1 [10-ounce / 284-g] bag fresh spinach leaves, chopped

1 tablespoon [15 mL] milk

1/3 cup [75 g] grated Parmesan cheese







Boil spaghetti noodles into a large casserole filled with salted boiling water for approximately 15 minutes, until 'al dente'.

Meanwhile, melt 1 tablespoon [15 g] of the butter or margarine into a casserole.

Brown sausage slices over medium heat stirring often for 2 to 3 minutes.

Stir in tomato sauce and oregano.

Bring to a boil; leave to simmer slowly for 15 minutes.

Melt remaining 1 tablespoon [15 g] butter or margarine into a frypan.

Stir-fry chopped spinach leaves for 2 minutes before stirring in grated Parmesan cheese and milk.

Serve drained spaghetti pasta noodles, coated with meat tomato sauce, then with spinach mixture.
