Texas Roadhouse Rolls
1 cup whole milk
1/4 cup water
1 large egg
1 teaspoon salt
2 tablespoons sugar
2 packages active dry yeast
3 cups all-purpose flour
1 cup butter for dough
2 tablespoons butter for brushing rolls
Combine milk and water, then warm to lukewarm temperature on the stove or in the microwave.
Beat the egg in a small mixing bowl, then add to the milk and water mixture.
Combine salt, sugar and yeast in a large bowl with 2 cups of the flour.
Create a well in the middle of the bowl with the dry ingredients.
Pour liquid mixture into the well.
Incorporate the liquid into the dry ingredients with your hands. Run hands along the sides and bottom of the bowl to ensure all ingredients are well mixed.
Melt 1/4 cup of butter on the stove, or in the refrigerator and add to the mixture and stir to incorporate.
Add the remaining 1 cup of flour to the mixture gradually while stirring.
Cover the bowl with a clean kitchen towel or plastic wrap and allow to sit for about an hour, or until the dough has doubled in size.
Coat a mixing spoon with oil, then punch the middle of the batter.
Grease a muffin pan with shortening or oil. You may need two muffin pans, depending upon their size.
Fill muffin tins about half full.
Melt 1 tablespoon of butter and brush the top of each roll.
Allow rolls to rise again until they have filled the muffin tins.
Bake for about 16 minutes in a 400 degree oven.
Melt another tablespoon of butter and brush the tops of each roll again.
Serve warm along with cinnamon butter.
Texas Roadhouse Cinnamon Butter
1 cup butter
1 teaspoon cinnamon
1/3 cup sweetened condensed milk
1/3 teaspoon corn syrup
Place one cup of butter in a medium-sized bowl. Allow the butter to warm to room temperature so that it is moldable and easier to stir.
Measure one teaspoon of cinnamon, one-third cup of sweetened condensed milk and one-third teaspoon of corn syrup and add it to the bowl.
Stir with a spatula or spoon until all ingredients are well-mixed and it takes on a frothy texture. If you are having trouble getting a creamy texture, consider whipping more air into the mix with a blender.
Serve the cinnamon butter at room temperature.
