The little guy is staying over this weekend - and he has been on a taco/nacho/cheeseburger kick lately.
So I'll make him one of these:
Cheeseburger Pie
One blind baked pie crust or savory crust
filled with:
Ground sirloin
Salt and pepper to taste
Parsley and garlic to taste
Finely minced onion
Finely chopped red pepper
Beaten eggs
Prepared somewhat like a meatloaf but pan fried and drained.
Transfer to prepared pastry shell and top with your favorite cheese(s).
Heat through in moderate oven.
Taco Pie
Similar to cheeseburger pie using taco seasoning mix and topped with cheddar, monterey jack, etc.
Heat through - spoon on salsa and sprinkle with copped lettuce - pop back in the oven for about 2 to 3 minutes.
Serve with sour cream, etc.
