Baked Bean Soup

Yeah - it's still summer - but fall is just around the corner. You all know how much I love the fall of the year! The perfect time for baking and getting the pantry ready for the upcoming holiday season.



Right now it's our 12th Annual Chicken Wing Festival up in Buffalo and it's hot, humid and so dang muggy there is no way I am going to battle thousands and thousands of people to taste wings from vendors all over the country and from Canada.



So we had our own little "wingfest" and I made the traditional Buffalo Wings, BBQ wings and my parmesan wings. Just finger-lickin' good.



And the thunderstorms keep rolling in so it's a day to really stay in.



Just going through more of my vintage recipes - some so old it's not funny. I came across this one - and I want to give this one a try -



1 qt. baked beans

1 medium onion - chopped

2 qts. water

3 T. butter

3 T. flour

salt and pepper to taste



Add beans and onions to water; cook until soft. Put through a strainer.



Melt butter; add flour; cook like a roux; add about 1 cup of the "soup"; heat well - add remaining soup; heat through.



optional - a cup of diced tomatoes can be added
