Corn Fritter Question

While I don't expect anyone to have heard of this place, much less know the recipe, the Lazy Dog Sports Bar & Grill in Erie, Colorado serves these fantastic sweet corn fritters.



They are little balls about the size of a quarter, filled with nuggets of sweet corn and lightly dusted with powdered sugar. Nice and cakey on the inside with a very thin crispy outside, yet they were a dark brown color, nearly as dark as chocolate cake.



I am thinking this color must be from the type of flour used in the batter, because frying something this small to the point of having this color would make them so crunchy they would be practically inedible. Any thoughts?
