Summer Berry Sorbet

Ingredients:


  • 500 grams of summer fruits

  • juice and rind (grated) of 1 orange

  • 2-3 table spoons of orange liqueur

  • 2 eggs without yolk

  • 100 g caster sugar






Recipe:


  • Put the fruit, orange rind and juice, liqueur and 175ml water in a food processor and blend until it get smooth. You may leave seeds or sieve your mixture.

  • Use a ice cream machine or a rigid container to freeze the mixture with stirring every 30 minutes

  • Whisk the egg whites and add caster sugar until it becomes firm and glossy. Fold the meringue into the freezing fruit mixture and freeze with continuous stir until complete frozen. For best results store the mixture in fridge for 30 minutes.
