3 Roma tomatoes, finely diced (about 1 ½ cups)
1/4 tsp salt
1 tbsp fresh basil, minced
2 tsp garlic, minced
1 tbsp Parmesan cheese, grated
2 tsp marinated sun dried tomatoes, diced
pinch dried parsley flakes
2 tsp extra-virgin olive oil
1 tsp balsamic vinegar
9-10 slices ciabatta bread (or Italian bread)
Toss diced tomatoes with basil, garlic, sun dried tomatoes, olive oil, balsamic vinegar and salt in a bowl. Cover and chill for about 1 hour.
Preheat oven to 450F
Mix Parmesan cheese with dried parsley in a small bowl. Place the bread slices on a baking sheet.
Sprinkle some of the Parmesan cheese mixture over each bread slice. Bake for 5 minutes or until the bread starts to crisp.
Pour tomato mixture into a serving dish, straining off the excess liquid, and serve it with the toasted bread slices.
