1 lb. cheddar cheese curds
2 large eggs, beaten
1/2 C. milk
1 C. flour
1 1/2 tsp. baking powder
1/2 tsp. salt
Oil
Sift the flour, baking powder and salt together. Add in the eggs and milk and mix until smooth. If needed add some additional milk to thin out the batter.
Take the cheese curds and coat with the batter. Using a large skillet heat the oil over medium heat. Add the batter coated cheese curds and fry for 1 minute each until they are a golden brown.
Once finished place on a paper towel to soak up the excess oil.
