Baked Chicken Strips

4 boneless, skinless chicken breasts

2 tbsp. fresh lemon juice

1/2 c. whole wheat bread crumbs

1/2 c. nonfat Parmesan cheese

1 tbsp. coarsely chopped fresh cilantro

1/2 tsp. chopped fresh thyme

Nonstick cooking spray



Preheat oven to 400F. Cut the chicken breasts into 1 inch strips. Sprinkle the lemon juice over the chicken. In a bowl, mix together the bread crumbs and coat well.



Lightly coat a baking sheet with nonstick cooking spray. Place the coated chicken strips on the sheet and spray lightly. Bake for 20 - 30 minutes, turning once or until crispy on both sides.



Serves: 6
